Dinner at Colm & Lisa’s

On Saturday night Adrian and I went to my brother Colm and his girlfriend Lisa’s home for dinner. The house, an idyllic country cottage close to Carrick on Shannon provides a cosy base for Lisa who works as a Social Care Worker in Sligo, Colm, a student of Forestry in UCD and their beloved dogs Zorro and Sassy…

Colm and Lisa’s home is all natural wood, fairy lights and fireplaces, deep coving and doorways, white walls and lovely touches of red and stone with a good smattering of retro & a polka dot kettle…

For starters we had Bruschetta, Homemade Houmous & Deep Fried Brie.

For main we had Smoked Cod & Chorizo with Potatoes & Asparagus in a Whiskey Cream Sauce…delicious.

Such a treat to be cooked for & Lisa is a fabulous cook..
