It was my sister Martha’s birthday a few days ago and to celebrate I threw a special lunch for just us two.

Halloumi & Avocado Salad
Blue Cheese, Walnut & Pear Salad
Toasted Bread Salad
Halloumi & Avocado Salad – A match made in food heaven. Simply pile slivers of salty fried halloumi cheese and creamy avocado on a bed of salad leaves, add the dressing (below) and your done.
Blue Cheese, Walnut & Pear Salad – Toast some walnuts on a dry frying pan or in the oven, they burn very quickly so watch them! Assemble juicy slices of pear with creamy blue cheese on a bed of salad leaves and crumble the nuts over.
French Dressing – I used this dressing, and this quantity, for the first two salads.
- 6 tbsp of extra virgin olive oil
- 3 tbsp of sunflower oil
- 3 tbsp of red wine vinegar
- 3 tsp grainy mustard
- 2 tsp of honey
- salt & black pepper and shake well to combine.
Toasted Bread Salad – Tear some good quality bread, going stale is perfect. I used Lidl’s cheeesy sourdough. In a bowl toss the bread with a good splash of tomato juice from a tin, some extra virgin olive oil, sea salt, and fennel seeds. You could add herbs and/or crushed garlic too.
Toast in the over for 20 minutes or so at 200 c and serve warm…And there you have it, what could be simpler? We had a brilliant afternoon, non-stop chatter. Happy Birthday Martha xox
